Very limited to  do something new on days I work for 12 hours but stopped by my local farmer’s market and decided to make an impulse buy with an acorn squash but as soon as I left, I thought it wasn’t drastic enough so I went back in and grabbed a yautia, had no idea what it was or even what category it fell under. For all I knew it could be a piece of hairy meat but it was with the other vegetables so I guess it falls in this category. After google-ing yautia, I found it was a root vegetable and looked for ways to prepare it. I’ll save that for later to check in as my new task for the day. But for today my $1.33 purchase of yautia and acorn squash is secretly kind of rewarding. It is strange to feel accomplished by buying something other than carrots and celery?

Any suggestions for recipes?
